Tasting a praline means tasting a piece of history. Born four centuries ago in the kitchen of Marshal du Plessis-Praslin, pralines have been from the very beginning the subject of much gossip. Some stories – as hard to prove as they are – say that the heart-robbing Praslin asked his personal chef to create a treat he could offer the ladies whose hearts he was intent on conquering. Instead, he succeeded in conquering the tastes of Europeans and Americans as well.
Initially made of almonds or hazelnuts coated in caramelized sugar, pralines now encompass more than one group of confectionery. In Europe, they may mean chocolates that incorporate ground sugary nuts. In Belgium, they are pieces of chocolate filled with soft mixtures such as liquor, marzipan or caramel. In America, pralines tend to remain faithful to the initial recipe of nuts and sweet coating. Entering the new continent through Louisiana, and by way of benevolent nuns who taught the secrets of this delicacy to young French women come to marry colonists, these little pieces of confectionery seem to always carry a romantic undertone.
